This recipe for frozen watermelon margaritas is one of my favorite ways to use up some leftover watermelon. Since there are just two of us, Greg and I have a hard time finishing a whole watermelon by ourselves before it goes bad. When it’s in season, though, the price of a full-sized watermelon is about the same as the price of a personal size. This recipe was one of my solutions to that problem. Since it starts with frozen watermelon cubes, it’s a good way to preserve leftovers!
If you like a salted rim, you can totally add that in. I usually don’t bother with a salted rim when I’m making margaritas at home, but that’s mostly because I’m lazy. If you want to get really extra you could use a chili-lime salt like tajin on the rim. I love chili-lime salt on plain watermelon cubes, so I think it would go great with this cocktail!

Frozen Watermelon Margaritas
- 7 cups frozen watermelon cubes (or however much fills your blender; I use a 7 cup Pyrex container)
- Juice of 4 limes (6 if you want more tang)
- 1 cup tequila
- 1/2 cup triple sec
- Combine all the ingredients in a blender and blend until smooth. That's it!
